Clean Eating Dinner Recipe- Chicken and Rice Bake

I love simple, no-fuss recipes.  And when they're delicious?  That's a win-win for everybody  because it means they'll actually get eaten.  

The Chicken and Rice bake served both of those purposes.  Plus, it was a healthy clean meal so I didn't feel guilty eating it.  


1½ cups uncooked brown rice
2 (14.5-oz) cans reduced-sodium beef broth
2 (8 oz) packages sliced fresh mushrooms
1 shallot, minced
1 teaspoon chopped fresh thyme
¼ cup olive oil, divided
2 tablespoons butter
6 bone-in, skinless chicken breasts
½ teaspoon salt, ½ teaspoon freshly ground pepper


Preheat oven to 350 degrees.

Combine rice, broth, mushrooms, shallot, thyme, 2 Tbl oil and butter in a lightly greased 13x9 baking dish.  Cover and bake 30 minutes. 

 Meanwhile, heat remaining olive oil in a large skillet over medium-high heat; sprinkle chicken with salt and pepper.  Brown chicken in hot oil 3 minutes per side

Add chicken to rice mixture in baking dish.  Cover and bake 45 minutes longer or until chicken is done and rice is tender. 

The suggested side dish recipe was a Strawberry-Spinach Salad.  I happened to have all of the ingredients on hand, so I went for it.  I'm not a huge raw spinach or strawberry eater, but I stepped out of my comfort zone and tried it.  And?  It was actually pretty yummy. I ate my entire serving.  

½ cup sliced almonds
2 (5-oz) packages fresh baby spinach
1 quart fresh strawberries, sliced
2 tablespoons fresh lemon juice
1 tablespoon honey
1 teaspoon chopped fresh thyme
¼ teaspoon salt, ¼ teaspoon freshly ground pepper
3 tablespoons olive oil


Heat almonds in a small nonstick skillet over medium-low heat, stirring until lightly toasted and fragrant; let cool.  
Combine spinach, strawberries and almonds in a serving bowl.  Whisk together lemon juice, honey, thyme, salt, pepper and olive oil.  Pour dressing over salad tossing well to coat.
