Buffalo Chicken Ring: What's Cooking

While doing this month's Once a Month's Mom menu, I made a buffalo chicken filling for the rolls {find the original recipe here}.    I turned mine into Buffalo Chicken Puffs and wanted something different after awhile so I did what my grandmother always said do..  I improvised. 

Pillsbury's Crescent Rolls are a STAPLE in my kitchen.   Y'all.. these things are amazing:  Cook them as rolls (yum), use as pot pie crusts (yum), use as impromptu pizza sticks (so yum) or even stuffed with fruit as a tart like dessert (Di-Vine).   They're so diverse.  And addicting.  Love me some carbs. 






Anyfoodie...   I took my chicken filling & made a Buffalo Ring (like Pampered Chef's Taco Ring)..  It was a hit!


Natalie's Buffalo Chicken  Ring

2 cans Pillsbury Crescent Rolls
approximately 1-2 chicken breasts
1/2 cup Wing Sauce (more or less to taste)
a handful of dry Cole slaw (optional, but I thought the texture added a needed crunch factor)
1/2 cup Feta Cheese (or any kind really)

Directions: 
Boil chicken; shred.  Mix with wing sauce & Cole slaw.  

Preheat oven to 350 degrees.
Open Crescent Rolls & lay on a pizza stone in the design of a sun (points out).  Spoon filling into dough being careful not to over fill.   Sprinkle the Feta over chicken filling.  Grab the "point" and fold the dough over.   Seal the dough together, rearranging as necessary. 


Place in oven & bake for 15 minutes or until dough is golden brown.   Serve w/ Ranch or Blue Cheese Dressing.




Another variation I found in case you don't have a pizza stone..

 Create the filling (or any variation).  Lay the crescent rolls out in pairs, as to create a rectangle.  Fill with chicken & bring opposite corners together to close.  Bake.  Enjoy. 
**This would be a great way to make ahead & freeze.

Yum! I made something similar at Christmas time, but no chicken and it was an appetizer dish.
